Our bodies operate on glucose which we need for energy. Our bodies get glucose mainly from starchy foods or carbohydrates contained in vegetables, grains, sugars and fruits. This energy fuel is carried around the body via the blood, which is why it is known as blood glucose or blood sugar and when we eat more than we need the extra is stored and turned into fat. If your body never has more glucose than it needs, there is no extra to turn into fat.
Foods contain different forms of carbohydrates and some take longer than others to breakdown and release their sugars into the blood stream. The rate at which a food increases blood sugar can be measured and the food is given a rating index. This index is known as the GI. Additionally foods can be measured for the quantity of their ‘sugar’ as well as the speed at which they increase blood sugar and this index is known as the GL index.
The GL index gives a better indicator than the GI index of the effect any given food has on our blood sugar and so we can use this GL index to select foods to balance our blood sugar through the day.
Keeping a balanced blood sugar is the key to loosing weight or maintaining a constant weight. Eating high GL foods will encourage fat storage, while eating low GL foods will encourage the body to burn fat.
