2 chicken breasts cut into slices about ½ cm thick
2 medium onions sliced
2 cloves of garlic crushed
4 mushrooms sliced thickly
½ pt water or stock
½ tsp Sumac what it is
½ tip Zaatar – Eastern spice blend of sesame seeds, oregano ….
1 heaped tsp Marigold bullion powder
1 tblsp olive oil
Warm the olive oil in the pan on a low heat and fry the onions lightly, until clear
Add ¼ pt of the water or stock, the chicken and mushrooms and stir
Cook on a low heat, stirring occasionally for 10 minutes
Add the sumac, Zaatar, and Marigold boullion and garlic and stir through
Add the remaining water or stock and cook for a further 5 minutes
This is delicious served with sweet potato mash and lightly steamed broccoli florets with a little harissa and a small knob of butter stirred through.
