5 minute snack
A delicious snack in a lovely pink colour, to eat with vegetable sticks, sugar snap peas or spread on oatcakes. Also a great starter in the well of avocado with red onion sliced on top and a sprinkle of goji berries. The walnuts provide a good protein and Omega 3 oils, while the celery and pepper lots of plant nutrients, vitamin C and potassium
1 large tablespoon = 5GL
- 250gms pecan nuts or walnuts
- 1 large stalk of celery
- ½ large red pepper
- 1 small onion
- ½ teaspoon sea salt
1 clove of garlic could be added or a few sprigs of fresh mint or parsley to change and enhance the flavour
Blend all the ingredients in a food processor until as smooth as you require.
Decorate with goji berries and serve with cut apple or cucumber sticks as a dip or as a pate spread on oatcakes with a slice of cucumber and chopped parsley.
