Asparagus has a great taste and full of good pre-biotic fibres. It contains good detoxification supporting sulphur compounds and lots of antioxidants to support the health of the skin. It is also rich in vitamin A, C and E.
Radishes and tomatoes contain colourful flavonoids that support skin health and the avocado is a wonderful source of the Omega 9 oils and anti-oxidants – a delightful skin health recipe.
 Ingredients
(Serves 4)
- 250gms asparagus
- 12 cherry tomatoes halved
- 1 ripe avocado – peeled and sliced
- 8 radishes
- Large handful of sliced basil leaves or coriander
Dressing Ingredients
- 2 tablespoons olive oil or flaxseed oil
- 1 tablespoon lemon juice
- 1 tsp mustard powder
- 2 tsp maple syrup
- Sea salt and ground black pepper to taste
Method
- Steam the asparagus for 5 -10 minutes – drain and rinse with cold water (to keep the colour) and cut into 2 cms peices
- Blitz all the dressing ingredients together with a hand blender
- Mix the salad veg together and toss the dressing to thoroughly mix chill to marinade in the fridge for 30 mins (if possible) and serve – a great barbecue salad
