This is great for a quick dinner and rich in Omega 3 oils that support cell and brain health. The brain is approx. 60% fat and when healthy fats are added to the diet this supports cognition, preserves healthy nerve messaging and lessens brain degeneration.

Ingredients List
- 2 fillets of salmon – wild keto salmon is great
- 1 large onion
- 3 cloves of garlic
- 4 large tomatoes
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1 tablespoon of olive oil
- 1 tablespoon Tamari or soy sauce
- Ground black pepper to taste
- Small handful of fresh parsley chopped roughly and a little to decorate
Method
- Lightly heat the olive oil in a small saucepan, over a low heat
- Chop onions and garlic finely and pop into a saucepan with the oil and cook until softened – about 3-5 mins
- Chop the tomatoes roughly
- Add all the ingredients apart from the chopped parsley and stir through to cook for approx. 5 minutes
- Blitz the sauce to a rough consistency
- Place the salmon in an oven proof dish and cover with the tomato sauce
- Bake in the oven covered for 20-25 minutes
Storage instructions – can be stored in the fridge for 2 days however ideally use on the day of cooking
Alternative Ingredients: – a tin of tomatoes could be used instead of fresh tomatoes. Sea trout fillets could be swapped for the salmon
