Crunchy Apple and Pomegranate Crumble

The Autumn is the time for delicious apples and the wonderful polyphenol content supports the health of the Gut beautifully. Cooked apple provides an easier digested form and if you include the skins these nutrients are increased – make sure you have a good source of apples so the inclusion of the skins doesn’t increase the toxic elements.

Pomegranate is a wonderful flavour to combine and adds colour and a crunch – it contains great phytoestrogens and is very high in anti-oxidants.

Ingredientsapple and pomegranate crumble
  • 75gms pumpkin seeds
  • 125gms whole rolled oats
  • 1 tsp cinnamon
  • 2 tblesp coconut oil
  • 2 tblesp pressed apple juice
  • 250gms bramley apples or dessert apples (not peeled – just washed and cored)
  • 150gms pomegranate seeds
  • 1 tbsp maple syrup
Method
  • Pre heat the oven to 175C
  • Core the apples and cut into chunks
  • Cook in a saucepan with a little water over a low heat until soft
  • Stir in the pomegranate seeds and maple syrup
  • Place in an oven proof dish
  • Place seeds, cinnamon and oats in the food processor or any blender that will blitz into small pieces – leaving some crunchy bits
  • Melt the coconut oil over a low heat
  • Add the crumble mix to the coconut oil and apple juice and stire well
  • Place on top of the fruit and cook for 30 mins

Serve with custard or creme fraiche or yoghurt
