A quick and easy healthy recipe that will delight the family – Sweet Potato and Butter Bean Soup. 
Sweet potatoes contain good anti-oxidants and vitamin A and they make a great tasty to soup. You could use chickpeas or butter beans to give the protein, fibre and slower digesting carbohydrates, which helps to keep the blood sugar stable.
Serves 6
Ingredients
- 4 medium sized sweet potatoes
- 1 garlic clove
- 420 tin of butter beans or chickpeas – rinse thoroughly before using
- 1 onion
- ½ teaspoon of cumin
- 1 420 tin of tomatoes or 450gms of fresh tomatoes
- 1.5litres of vegetable stock which can be made with 2tsp Marigold Organic Vegetable Bouillon & hot water
- Handful of fresh coriander or parsley
- Ground black pepper and sea salt to taste
Method
If the sweet potatoes are organic just clean and chop otherwise peel and chop
Peel and chop onion and garlic
Place all ingredients except the butterbeans into a stock pot and bring to the boil and cook for 25 mins until vegetables are soft
Add butter beans and blitz to a smooth consistency – heat through and serve sprinkled with chopped coriander or parsley or a swirl of cream or coconut cream
