Low carb. and rich in Omega 3 oils, this dessert recipe packs a punch of healthy nutrients. To accommodate GF, DF and Vegan options the ingredients can be changed as noted in the recipe. If a sweetness is required to add to this, include 1 tablespoon of maple syrup or honey into the cheesecake mixture, however I find the taste is great without additional sweetness.

Set oven to 150C (fan oven) – cooking time 30 minutes
Ingredients
- 200gms – Mix of Pumpkin Seeds and Walnuts
- 50gms – Organic butter or Organic Coconut Oil
- 200gms x 2 (total 400gms) – Strawberries – fresh or frozen and thawed
- 1 tbsp – Lemon juice
- 1tsp – Ground Cinnamon
- 2 tbsp Chia Seeds
- 300gms – Cottage Cheese or Silken Tofu
- 3 Medium Sized Eggs
- 1tsp Vanilla Extract
Method:
- Blitz the nuts in a Magi Mix or similar food processor
- Melt the butter or coconut oil
- Blend the oil and seed/nut mix together
- Press into a 15cm loose bottom cake tin
For the cheesecake mix - Blitz 200gms of strawberries, lemon juice, cinnamon, cottage cheese or silken tofu, eggs and vanilla in a MagiMix or similar food processor until smooth.
- Stir in the chia seeds
- Pour into the loose bottom cake tin and cook for 30 minutes in the oven and then leave in the oven until the oven cools. – I pop a baking tray underneath the tin when in the oven to catch any oil etc.
- Leave the cheesecake in the tin and place in the fridge to cool for about 1hr
- After approx. 1 hr remove the cheesecake from the cake tin using the loose bottom and pushing up through the cake tin
For the cheesecake topping
- 200gms – Strawberries – fresh or frozen and left to thaw. If using thawed strawberries drain the juice off and (this could be thickened over a hob with the addition of arrowroot or cornflour – see below)
- (1tbsp – Arrowroot or cornflour if thickening and this is done by straining the juice off the thawed strawberries, bring to boil in a saucepan, mix the arrowroot or cornflour with cold water into a smooth paste and stir into the boiling juice – remove from the heat as soon as thickened, stir into the thawed strawberries and cool in the fridge)
- 300gms – Whipping Cream or a thick Coconut Yoghurt
Method
- Decorate the strawberries over the centre of the cheesecake
- Whip the cream if using cream and decorate around the edge or spread the thick coconut yoghurt around the edge.
Serve with a little pouring cream or yoghurt
